WOW Wholly Guacamole has outdone themselves again!! I fell in love with their guacamole not to long ago but never thought that I could be more impressed with a company until recently. I decided not too long ago to participate in my first Fun Food Hop. I know what your thinking.. what the heck is that? Well my friends over at A little Inspiration and Shy Babies put together a event in which bloggers such as myself would make their own creations from a specific product that a company makes. With Wholly Guacamole having their new Salsa collection hit the shelves it was the perfect opportunity.
Wholly Guacamole sent out an amazing cooler stocked with their new salsa products (and a few guacamole products for good measure) for me to work with in creating my recipe. When the cooler came, curiosity got the best of me and having some tortilla chips handy I dove into the Mild salsa. Amazing you could tell that the salsa was made with the highest quality and freshest ingredients. Before I knew it with the help of my son the mild salsa vanished..Guess we wont be using that one.
The new salsas come in a multitude of Varieties including….
Mild, Medium, and Hot Original Salsa
Pineapple , Mango and Roasted Red Pepper
And Guacamole with Spicy Pico!!
For my recipe I chose to use the Fire Roasted Tomato, bringing the perfect balance of flavor and spice to my dish..
I Present to you…Bbq’d Cheesy chicken Taco dip…. Here is what you will need.
2 boneless skinless chicken breasts sliced thin
1 container Wholly Guacamole Roasted Tomato Salsa
1 Teaspoon Olive Oil
1 Cup Velveeta
1 cup shredded Mild Cheddar Cheese
1 1/2 cup sour cream
2 cups Chopped Tomato
Chopped Black Olives ( If you like them)
Slice the chicken breast thin so your 2 become 4 and place in foil packet ( Folded up tin foil that makes a seal so good stuff doesn’t get out) or line grilling pan with foil.
add olive oil and cover chicken with salsa, place on already heated grill. Let cook turning chicken and making sure salsa does not burn.
When chicken is cooked well remove from pan or packet and shred and put aside.
In a microwave safe bowl combine Velveeta, 1/2 cup shredded cheese, shredded chicken and any salsa remaining in pan or packet.
Microwave until Velveeta and Shredded cheese are melted and mix well.
In a baking dish place all of chicken mixture and spread out evenly, let cool in the fridge for about 10 min the spread sour cream throughout the pan.
Top with shredded Lettuce, Tomato, remaining Shredded Cheese and Black olives ( If you like them)
Let Chill and EAT!!!!
The smoky flavor from the BBQ, the slightly spicy Kick from the salsa and the cool from the sour cream make for one amazing combination!!!!
