Summertime is always the perfect time for BBQing, Fresh fruit and Cold salads!! I love potato salad but sometimes I’m not in the mood for your traditional salad. This is a lighter Potato salad made with Broccoli, that is super easy and hits the spot!!! Here’s what you will need…
5- 6 peeled and cooked potatoes cubed
3-4 small crowns of Broccoli
1 1/2 Teaspoons of crushed garlic
1/2 cup Olive Oil
Salt to taste
Heat the oil in a frying pan and add crushed garlic.
Saute garlic until lightly brown and add the Broccoli, cook Broccoli to likeness ( I like mine softer)
Add cooked and cubed potatoes and mix well
Cook for about 10 minutes letting all of the taste combinations to mix, pour everything into a bowl and let cool in the fridge
Add salt to taste and eat!!!
