These came out better then I could’ve imagined I have never tried Cool Whips new frosting but am so happy with the taste and texture that it will be my go to frosting when I don’t feel like making homemade!!
Here is what you will need for these yummy cupcakes!!
½ cup (1 stick) unsalted butter, melted
½ cup granulated sugar
1 cup all-purpose flour
1 teaspoon baking powder
2 whole large eggs, room temperature
¼ cup whole milk
1 teaspoon pure vanilla extract
1 Package White Chocolate instant pudding mix
1 1/2 Cup White Chocolate Chips
Seedless Raspberry Preserves
CoolWhip Vanilla Frosting
Line cupcake cups with papers lines. Preheat the oven to 350 degrees F.
Place the eggs and sugar in a mixer bowl and beat until fluffy and pale yellow in color. Meanwhile, heat the milk in a saucepan over medium heat. Bring just to a boil and then add the white chocolate. Whisk until smooth. Place the white chocolate and milk mixture over the eggs and sugar and beat for a minute. Add the vanilla and mix until combine. Fold in the flour, instant pudding, and baking powder with a rubber spoon until just incorporated (don’t over mix). Fold in the melted butter.
Fill each cupcake line two-thirds full with batter ( I use an Ice Cream Scoop). Bake for 20-25 minutes or until risen and just firm to the touch.
Let cool for a few minutes the make small holes in the center of the cupcakes for the Raspberry Preserves. Fill either a piping bag or a sandwich bag with Raspberry preserves and cut off tip to pipe preserves into the centers of cupcakes.
Let cool completely and then frost with CoolWhip Vanilla Frosting
Again I am so pleased with CoolWhips new frosting I can’t wait to try their other flavors.
